Welcome to Paradiso’s Zero Waste Lab
Giacomo Gianotti, winner of the first edition of the Torres Brandy Zero Challenge competition, opens the doors to the Zero Waste Lab at his Paradiso cocktail bar.
SUSTAINABILITY AS A STANDARD
The Torres Brandy Zero Challenge global competition aims to reach out to the world of cocktails to make the planet a more sustainable place. Because we can all do our bit.
Torres Brandy’s commitment to the environment takes the form of a competition that challenges mixologists and cocktail bar owners to present their sustainable bar management project.
In 2023, Giacomo Gianotti, owner of one of the best cocktail bars in the world, won the first edition of the Torres Brandy Zero Challenge, a final in which mixologists from 7 different countries presented their sustainable bar project. With his Zero Waste Lab project at Paradiso, Giannotti is committed to reducing the waste generated in his cocktail bar, and thus also to reducing CO2 emissions. Quite the challenge.
In his Zero Waste Lab project at Paradiso, Giannotti, together with his team, researches, studies, and puts into practice the processes and techniques to reuse the waste generated at the Paradiso cocktail bar, whether it’s organic, plastic or glass waste. Waste that he then transforms into coasters or glasses, among other useful objects for the bar’s daily needs.
WHEN THE PRIZE
BECOMES REALITY
Giacomo Gianotti, after winning the first edition of the Torres Brandy Zero Challenge, received the €30,000 prize, which kick-started his Zero Waste Lab project by allowing him to buy the machinery needed to make it a reality.
In this video, he tells us about his experience:
INSPIRATION FOR OTHERS
The project he submitted not only helps make his cocktail bar more sustainable, it also serves as inspiration for other mixologists. An example: the finalists of the 2nd edition of the Torres Brandy Zero Challenge.
The 10 finalists who traveled to Barcelona to take part in the grand finale were able to attend the Zero Waste Lab in Paradiso to see first-hand how the winner of the first edition brought his project to fruition. Because it’s not about having ideas, but about implementing them with maximum efficiency.
